Chicken drumsticks with pineapple and peanuts - Brazilian BBQ
INGREDIENTS FOR 4 PERSONS
Chicken drumsticks with pineapple and peanuts
12 chicken thighs, 1 pineapple, 6 tablespoons peanut oil, 1 lime (juice), 6 sprigs of fresh coriander, 150 g peanuts
WIBERG product: 2 tbsp Fruity BBQ
Sweet potato wedges
800 g sweet potatoes, 2 tbsp peanut oil
WIBERG product: 1 tbsp Fruity BBQ
PREPARATION
Chicken drumsticks with pineapple and peanuts
Wash the chicken legs, pat dry and grill until juicy. Peel the pineapple, cut into rings and grill on both sides. Mix peanut oil with the juice of a lime and Fruity BBQ. Marinate the chicken and pineapple in a bowl with the peanut-lime mixture. Chop the coriander, add it along with the peanuts and mix everything well.
Sweet potato wedges
Preheat oven to 175 °C fan oven. Wash the sweet potatoes, cut into wedges and bake in the preheated oven for around 40 minutes. Mix peanut oil with Fruity BBQ and season the sweet potato wedges with it.
Tip: As an alternative to the grill, the chicken legs can also be cooked in the oven! Simply bake at 175°C for 40 minutes until the chicken legs are golden brown.
