Hummus with figs and sheep's cheese for oriental delights
INGREDIENTS FOR 4 PERSONS
2 cloves of garlic, 900 g cooked chickpeas, 300 ml beetroot juice/beetroot juice, 2 tbsp tahini, 1 lemon (juice), 4 figs, 1 tbsp butter, 12 black olives, 200 g feta cheese, 4 tbsp olives -oil, 4 small flatbreads
PREPARATION
Peel garlic. Puree the chickpeas with beetroot juice/beetroot juice, tahini, garlic and lemon juice. Season with Oriental. Wash the figs, halve them and fry them in butter. Season with Oriental and serve on top of the hummus along with the olives. Sprinkle sheep's cheese on top, refine with olive oil and serve with lukewarm flatbread.
Tip: Hummus is also great for dipping raw vegetables or as a spread in a roll. It is also a wonderful warm side dish for oriental-inspired main dishes.
