Pancakes with blueberries, strawberries and syrup

Ingredients:

  • 1 cup flour
  • 2 tbsp sugar
  • 1 teaspoon Baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 cup milk
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • Fresh blueberries
  • Fresh strawberries
  • Maple syrup for serving

Preparation:

  1. In a large bowl, combine the flour, sugar, baking powder and salt.
  2. In a separate bowl, lightly beat the egg and then add the milk, melted butter and vanilla extract.
  3. Add the liquid ingredients to the dry ingredients and mix well until a smooth dough forms. Do not stir for too long to get fluffy pancakes.
  4. Preheat a pan over medium heat and add some butter or oil.
  5. Pour the batter into the pan in portions (depending on the desired size of the pancakes) and distribute a few blueberries on each pancake.
  6. Bake the pancakes until golden brown on both sides.
  7. Serve with maple syrup and sprinkle more blueberries on top if desired.
