Pancakes with blueberries, strawberries and syrup
Ingredients:
- 1 cup flour
- 2 tbsp sugar
- 1 teaspoon Baking powder
- 1/2 tsp salt
- 1 egg
- 1 cup milk
- 2 tbsp melted butter
- 1 tsp vanilla extract
- Fresh blueberries
- Fresh strawberries
- Maple syrup for serving
Preparation:
- In a large bowl, combine the flour, sugar, baking powder and salt.
- In a separate bowl, lightly beat the egg and then add the milk, melted butter and vanilla extract.
- Add the liquid ingredients to the dry ingredients and mix well until a smooth dough forms. Do not stir for too long to get fluffy pancakes.
- Preheat a pan over medium heat and add some butter or oil.
- Pour the batter into the pan in portions (depending on the desired size of the pancakes) and distribute a few blueberries on each pancake.
- Bake the pancakes until golden brown on both sides.
- Serve with maple syrup and sprinkle more blueberries on top if desired.
